D is for Dorada. The Dorada, Sparus aurata, is a very popular fish in Spain and is found on most menus. In English it is the Gilt-head Bream, or Gilt-head Sea Bream, widely regarded as the tastiest of the breams.
The Dorada is found in the Mediterranean Sea and the eastern coastal regions of the North Atlantic Ocean and commonly reaches about 35 centimetres in length, although it can reach a length of 70 centimetres and weigh up to around 17 kilograms if left to its own devices.
